Chickpea, Almond and Rocket Salad (serves 6-8) When Body and Mind had the privilege of visiting CNM for one of their free talks. Tania March was the guest speaker- Tania is a Dietician based in Pietermaritzburg, and this is the salad she made for us that evening. Ingredients: - 200g rocket - 2 avocados, peeled, pip removed and sliced - 2 cups chickpeas, cooked - 1/4 red cabbage, shredded - 1 red pepper, sliced - 3 pears, peeled - 1/3 cup toasted almonds or cashews - 1/4 cup pumpkin seeds - 2 tbsp chives, chopped or 2 spring onions Dressing: - 25ml white wine vinegar - 2 tbsp honey - 1/2 cup olive oil - 1 tbsp mustard - 4 drops Tabasco sauce - salt and pepper - 1 tbsp water - 4 tbsp red onion, finely chopped - 1 tbsp capers - 4 spring onion, chopped
